吃了好些天玉米麦芬打算换换口味,特别想吃纸杯蛋糕,感谢google同学帮我找到无数方子,比较之下选了这个感觉比较戚风的,果然好吃,备个分:
材料:低筋面(50 g,过筛), 糖 (50 g), 油(50 g), 盐(1 g),蛋四个
步骤:
0. 烤箱预热300F, muffin盘铺纸杯。
1. 分三个蛋。蛋白放入一个干净无油的打蛋盆待用。
2. 蛋黄和一个整蛋加油打匀,拌入面粉。
3. 蛋白略打发泡,分次加入盐和糖,打至干性发泡。
4. 将1/3蛋白泡倒入蛋黄糊,用橡皮刀翻动拌匀。
5. 将4的糊糊倒入剩下的蛋白泡里,迅速拌匀。
6. 分到纸杯里,烤之, ~25min
ingredients: (makes 12 regular muffin)
2 c all purpose flour (or substitute 1C w/ whole wheat)
1 c yellow cornmeal
1.5 t baking powder
1 t baking soda
0.5 t salt
2 large eggs
0.75 c sugar
8 T unsalted butter, melted and cooled (or use vegetable oil instead)
0.75 c sour cream
0.5 c milk

1.精牛肉(腱子肉或inside round) 2磅
卤汁:
1. 淡色酱油5T
2. 糖4T
3.盐0.5t
4.辣椒面1T
5.咖喱粉1T
6.姜片,八角 少许
做法:
1.牛肉煮至戳无血水渗出,冷却顺纹切大薄片。
2.卤汁大火煮滚后转小火,放入牛肉片,充分浸泡(如卤汁不够可加入牛肉汤),煮至汁干。
3. 将沾满卤汁的牛肉片排列于烤盘上,不可重叠。
4.烤箱预热350F,烤8min,翻面再烤8min(重复至干), 取出置于密封盒内自然冷却。可保存4~5天
